Sticky Chinese Pork (Serves 4)

INGREDIENTS:

  • 1 pork tenderloin, or 4 pork steaks, with any visible fat removed

  • 1 tsp Chinese 5 spice

  • 1/2 tsp dried chilli flakes

  • 1 tbsp tomato puree

  • 2 tsp honey

  • 2cm piece of ginger finally chopped

  • 3 tbsp dark soy sauce

  • low calorie cooking spray

METHOD:

  • Slice the pork into thin strips

  • mix together with the all the ingredients and leave to marinate for about 30 minutes. Depending if I'm using another meat then I might marinate for longer

  • Put a wok of a large frying pan onto a hot heat, spray with the cooking spray and cook the meat for about 10 mins or until the meat is cooked through and the sauce has reduced to become sticky

Serve with a selection of vegetables and my breakfast rice goes really nice with this. You can swap out the honey for sweetner, but I've still not mananged to get the balance just right! Enjoy!
