Pizza Meatloaf (Serves 4)

This recipe I found on another website (http://twochubbycubs.com/slimming-world-recipes). They have some great recipes there, but you do have to trawl through their blogs to get to them, must admit some of their insights are quite amusing. I have tweaked this a bit from their version as I found it a little dry!

Anyways on to the food:

INGREDIENTS:

  • 500g beef mince

  • 50g chorizo

  • small onion diced

  • 4 tbsp tomato puree

  • 1 tbsp cider vinegar

  • 1 tsp oregano

  • 30g grated parmesan (1x HEA)

  • 70g reduced fat mozzarella (1x HEA)

  • few slices of ham

  • handful of basil leaves

  • salt and pepper (lots)

METHOD:

  • Preheat the oven to 190 degrees

  • In a small bowl mix together the tomato puree, vinegar and oregano to make a paste

  • Put the mince into a bowl with the onion, chorizo and 2 tbsp of the paste. Add plenty of salt and pepper, remember it's 500g mince, it will need it! Mix this in well, using your hands to soften the mince. Place bowl in the fridge and chill for about 30 minutes

  • Roll out some baking paper and shape the mince into a rectangle shape, about 9″ by 7″ (I used a rolling pin for this)

  • Add two tbsp of the tomato sauce onto the meatloaf and spread out, leaving about 1/2″ around the edge

  • One half, layer on a few slices of ham, half the grated mozzarella and half of the parmesan

  • Using the baking paper ‘fold’ over the empty half on top of the other half, and pinch together the seams

  • Carefully move the meatloaf onto a baking sheet

  • Spoon 2 tbsp of tomato sauce onto the top of the mixture and sprinkle on the remaining cheese and some salt and pepper

  • Cook in the oven for about 30 minutes

  • Serve with a selection of speed vegetables or salad
